Does anyone have a recipe for Caribbean Macaroni Pie?

Can you answer kikikens's question about Caribbean Vacations?:

I once had some Macaroni Pie from a Caribbean caterer and it was so delicious. I would love if anyone has a recipe for this dish. It tastes like basic baked macaroni & cheese but they added a twist to theirs.

Ingredients
2 cups dried short cut macaroni
3 tablespoons butter , plus extra for greasing
3 tablespoons white flour
2 cups milk
1 teaspoon mild prepared mustard
1/2 teaspoon ground cinnamon
1 1/2 cups sharp cheddar cheese , grated
1 egg , beaten
4 scallions , finely chopped
1/2 cup peas (optional)
3 tablespoons chopped plum tomatoes , canned (or fresh)
2/3 cup corn kernels (fresh or canned or frozen)
salt
pepper
fresh parsley , chopped (to garnish)
Directions
1Preheat the oven to 350*F. Bring a large pan of lightly salted water to a boil and cook the macaroni until al dente(about 8 minutes). Rinse under cold water and drain.
2Melt 2 tbls. of the butter in a pan and stir in the flour. Cook for 1-2 minutes, stirring. Gradually add the milk, whisking constantly until the sauce boils and thickens.
3Stir in the mustard, cinnamon and 1 cup of the cheese. Cook gently, stirring often, until the cheese has melted, then remove from the heat and whisk in the egg. Set aside.
4Melt the remaining butter in a small fryiing pan and cook the scallions, chopped tomatoes and corn over a gentle heat for 5-10 minutes. Season to taste.
5Tip half of the cooked macaroni into a greased ovenproof dish. Pour over the other half of the sheese sauce and mix well. Then spoon the tomato and corn mix over the macaroni.
6Stir the remaining macaroni into the remaining cheese sauce, then spread this carefully over the tomato and corn mixture. Top with the rest of the cheese. Bake for 45 minutes, or until the top is golden and bubbling.

Hmmmmmmmmmmm, try adding a cup of caribbean rum. If that doesn't work, at least you will feel happy. LOL

Macaroni Pie Recipe

16 ounces elbow macaroni
16 ounces Cheddar cheese, grated (about 4 cups)
2 cups milk, evaporated milk or half & half
3 eggs
salt and pepper to taste

Grease a 2 quart baking dish.

Preheat the oven to 350 degrees F.

Bring a large pot of water to a rolling boil. Add a bit of salt to the water and pour in the macaroni. Cook the macaroni according to the manufacturer's instructions, for about 10 minutes, or until al dente. (The macaroni will continue to cook in the oven.)

Drain the macaroni well in a colander, then pour it into a large bowl. Add the grated cheddar cheese to the pasta and stir to combine the two thoroughly.

Break the eggs into a medium sized bowl and whisk them lightly. Add the milk to the eggs and whisk them together Pour the milk and egg mixture over the macaroni, add salt and pepper to taste and stir to combine all of the ingredients well.

Pour the macaroni mixture into the greased baking dish and bake it in a preheated oven for about an hour, or until a knife inserted into the middle comes out clean. Allow the macaroni pie to rest for 15 minutes. Cut into squares and serve.

Note: If the top seems to be browning too fast or too much while it is baking, you can cover the baking dish loosely with some foil.

Ingredients
# 1 (14 ounce)package macaroni
# 4 cups grated yellow cheddar cheese
# 1 (12 ounce)can evaporated milk
# 1 large egg
# 3 ounces butter
# 1 small onion , chopped
# 2 stalks scallions , chopped (white part only)
# 1 clove garlic (chopped)
# 1/2 cup chopped green peppers
# 1 hot chili pepper , chopped (no seeds)
# 1 cup dried breadcrumbs
# salt
Directions

1.Cook the macaroni in salted water until it is well done but not soggy.
2.Drain well.

3. Meanwhile, place the onion, garlic, escallion, green pepper and hot pepper in a blender with a little of the milk and puree.

4. Set aside.

5. Take out 1 cup of the grated cheese and mix with the breadcrumbs.

6. Set aside.

7.Grease a 10"x6" casserole dish with a little bit of the butter.

8.Heat oven to 350 degrees F.

9. Mix the hot macaroni with the butter until all the butter is melted.

10. Add the remaining cheese and all of the seasoning mixture and mix until the melted cheese begins to form a sauce.

11. Once everything is well incorporated, add the egg and mix well.

12. Pour mixture into the prepared baking dish and top with breadcrumb/cheese mixture.

13. Pour remaining evaporated milk slowly over the top of the mixture, taking care not to let the dish overflow.

14. Let stand for about 15 mins so that the milk is absorbed.

15. Bake for about 30 mins or until the top is brown and crusty and the milk has been absorbed.

16. Let stand for another 15 minutes before serving.

1 package macaroni (225 grams / 8 oz.)
2 eggs
2 cups grated cheese
1½ cups evaporated milk
1 small onion, finely chopped
1 carrot, grated
1 tsp. salt
¼ tsp. white pepper

Boil macaroni in salted water until tender; drain.
Beat eggs until fluffy.
Combine macaroni, eggs, cheese, milk, onion, carrot, salt and white pepper.
Pour into a greased baking dish and bake at 175°C (350°F) until firm (approx. 30 minutes).

Macaroni pie can be enhanced further by adding ingredients such as tomato and chopped herbs. Use your imagination.
Usually best when the surface has browned to an even colour.
Some people sprinkle breadcrumbs on the surface prior to baking

Macaroni Pie Recipe

Macaroni Pie is very popular in the Caribbean islands. It turns up at Sunday lunch, at parties and on holiday tables without fail. Most of the time macaroni pie is a very simple affair. But everybody's mama has "the best" recipe for macaroni pie and every one of those recipes is different.

Sometimes a bit of sautéed scallion, onion or garlic is added to deepen the flavor. Some versions include vegetables such as green bell peppers, peas, tomatoes, carrots and corn. Others are made more hearty with the addition of fish or smoked sausage. Putting in hot peppers, hot sauce or chutney makes for spicy macaroni pies. And I have seen macaroni pies seasoned with herbs and spices, or topped, before baking, with bread crumbs or even ketchup .

This recipe produces a very simple and delicious macaroni pie: macaroni, cheese, milk and eggs are the primary components. It is a basic recipe that can be dressed up in any number of ways, and I will leave it to you to create your own special versions, if you wish, from here.
